Eggs with potatoes
Peel and cut into squares 1 kilo of potatoes and place in a greased oven casserole. Sprinkle with a stream of olive oil and broil for 40 minutes. Be careful to turn them halfway through cooking so they are golden and crispy. While making the potatoes, heat a little olive oil over medium heat. Add chopped onion and stir until it begins to brown. Add a bit of finely chopped garlic, paprika, a little spicy and oregano. Cook all together for one minute.
Put tomato cut into cubes. Add pepper salt and bring to a boil. Reduce heat to medium and cook at last over low heat for 3 minutes or until thick. Lower the oven temperature to 180ºC and add to the tomato sauce potato. Put the eggs in the mixture without breaking and bake about 18 minutes. Season to your liking
Recipes with egg, salmon and avocado
We propose some simple egg recipes for those days when you do not feel like cooking. It will only take you 15 minutes. Heat the oven to 220ºC and place baking paper on a tray. Part 3 avocados in half and eliminates the seed. Make the hole big enough to fit an egg. Reserve the leftover meat.
In the hole that has been left, place a slice of smoked salmon and the egg. Bake 12 to 15 minutes or until done. Mix the remaining avocado meat, 2 tablespoons of Greek yogurt and 1 tablespoon of lemon juice until smooth. Add a little chives.
